In addition, the water’s action at atmospheric pressure at or near sea-level and at its point of cooking, rather than in higher areas like Madrid, influences the process of absorption of the broth by the rice grains, and therefore, its flavor and unique texture. The truth is that you can find great paellas throughout the Spain, but always bear in mind that the origin of the dish is on the Mediterranean coast where its cuisine is one of its greatest characteristics.
